For Pasta 

1/2 lb fresh scallops u-10 

Fresh ravioli pasta rounds (10 pieces) 


For Creamed Spinach 

4 cups spinach 

2oz 35% cream 

2oz chicken stock 

1 Tbsp unsalted butter 

1 small shallot 

2 cloves garlic 

Kosher salt 

Fresh cracked black pepper 


For Arugula Pistou 

4 cups arugula 

1 clove garlic 

1 small shallot 

1/2 Cup grana padano 

1/4 Cup olive oil 

3 Tbsp lemon juice 

Kosher salt 

Fresh cracked black pepper 


For Beurre Blanc 

1 small shallot 

1 clove garlic 

2oz fresh lemon juice 

1oz white wine 

1 cup unsalted butter 

3 sprig thyme 

1 bay leaf 



1 medium parsnip 

1oz pine nuts (toasted during demonstration)

For cocktail: 

1.5 oz Ungava Gin

1 lime

1 oz simple syrup

6 basil leaves
